Banana Chocolate Puffed Rice Bars

Puffed Rice Squares

Marshmallow Ingredients: corn syrup, sugar, modified cornstarch, dextrose, water, gelatin, tetrasodium pyrophosphate, natural and artificial flavor, blue 1

Ain't nobody got time for those ingredients!  This is why I put a healthy twist on a not so healthy old favourite.  This recipe focuses on the power of whole foods.

  • raw cacao - an amazing source of antioxidants and minerals

  • dates - an unrefined way to get that sweet taste. They contain fibre, minerals, and vitamins unlike white sugar

  • sesame seeds - a great source of protein, fat, and fibre

  • hemp hearts - a great source of protein and essential fatty acids, it aids in both repair and growth



You will need:

  • a food processor or immersion blender (a blender will work too but it is a very thick consistency)

  • a large mixing bowl

  • a small casserole dish

  • spatula

  • parchment paper

Dry Ingredients:

  • 4 cups of puffed brown rice

  • 2 tbsp sesame seeds

  • 2 tbsp hemp hearts

  • 1/4 cup cacao nibs (+ extra for sprinkling on top)

  • 2 tbsp cacao powder

Wet Ingredients

  • 10 pitted dates, roughly 1/2 a cup, soaked in water for 10 minutes

  • 1/4 cup + 1 tbsp coconut oil

  • 1 small ripe banana

  • 1/4 cup nut butter of choice (I used an unsweetened almond hazelnut)

  • Nut milk as needed, 1 - 3 tbsp depending on softness of the dates

  • 1 tsp vanilla extract


  • Start by soaking a 1/2 a cup of dates in water for 10 minutes. While the dates are soaking combine the brown rice cereal, sesame seeds, cacao nibs, and hemp hearts in a large mixing bowl

  • In a separate bowl, combine the melted coconut oil, soaked dates (drained), nut butter, banana, and vanilla extract

  • Process until silky smooth. You want it to be nice and thick/ooey & gooey. If the wet ingredients are not mixing well, add 1-3 tbsp of nut milk.

  • Combine both the wet and dry ingredients. Mix well

  • Line a small casserole dish with parchment paper press down contents with a spatula until nice and even

  • Top with a small handful of cacao nibs

  • Let set in the fridge or freezer for at least an hour

  • Slice into 12 squares and enjoy
