This has been my go-to recipe for meal prep lately and I decided it was time to share! These bean brownies help curb chocolate cravings while providing the body with protein, fat, and fibre. A great pre or post workout snack.
The best part of this recipe is that it takes roughly 3 minutes of prep time!
When I originally sought out to make black bean brownies I was inspired by the hundreds of delicious looking recipes on the internet. I found a few that looked great and realized I was missing the majority of the ingredients. I also had accidentally already opened up a can of cannellini beans vs black beans. I decided to trust my culinary instincts and I am glad I did. These brownies are awesome!
You will need
a 8 x 8 baking dish
a high-speed blender or food processor
1 can of cannellini beans, drained and rinsed
1/3 cup + 1 tbsp maple syrup
1/3 cup cocoa powder
1/2 cup 80% + dark chocolate chips or shaved dark chocolate
2 tbsp melted coconut oil
2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
preheat your oven to 350 degrees
add everything but your eggs and the shaved dark chocolate to your blender or food processor. Blend until combined
(this will be pretty thick, if you do not have a high powered blender, be careful not to harm the motor)
add the eggs and 1/2 of the dark chocolate chips. Process until combined
line your 8x8 baking dish and pour the brownie batter, make sure it is evenly distributed
sprinkle the rest of the chocolate chunks on top
bake at 350 for roughly 25 minutes, or until the centre is firm
let cool completely before slicing up
(this is important so that it can continue to firm up)
once cooled, slice into 9-12 squares, enjoy morning, noon or night for a chocolate fix!
store in an airtight container in the fridge
